For those of you on the edge of your seat…our UConn boys did pull out a victory over Tulsa yesterday (and my caution was warranted…we were up 20 and only won by 2!) and our UConn gals demolished Temple today – lovely weekend for the Husky faithful!
It’s crazy that it’s already 5:30 – this day flew. I woke up around 9ish and got my dinner preparations together – am making pulled pork in the slow cooker and I had to get the sauce together ahead of time. It’ll be done in minutes and it smells so good! Can’t wait to make my polenta side dish, haha. 🙂
After I got that going, I went for a run. Yesterday was just too cold to even think about going outside, so I promised myself that if it just warmed up a few degrees today, I’d get there. My phone said it was 23 or so, which is manageable to me, so I checked the Runner’s World guide to dressing for outdoor running (it is remarkably accurate!) and headed out in full-length compression leggings, a long sleeved tshirt, a light running jacket, fleece headband, and gloves. My core was definitely comfortable. What I neglected to factor in was…the wind. Rookie mistake!! It’s Chicago, dummy!
But I’m super proud of myself for sticking to my plan – I wanted to play around with different running speeds, so I intentionally took the first mile at an easier pace, sped up for mile 2, relaxed again for 3, revved up again for 4, and finished mile 5 on the easier side. And if you look at my splits, it almost worked perfectly – I had about a 30-second difference between 1-4. Mile 5 ended up being on the fast side…because I was so ready to be done! Good god the wind was strong…I purposely ran into it for the first 2.5 so that I’d have it behind me for the last. As soon as I turned around it was like running in an entirely different city – so much easier! So much quieter!
Anyway, after the run I had breakfast and watched my UConn girls, then decided today was the perfect day for a manicure and went across the street to do just that. When I got back it was time to make my lunches for the week – a coconut curry soup, courtesy of that adorable Pinch of Yum site that I’ve mentioned before. I think the soup came out really well! It’s basically just light coconut milk, potatoes, and tofu (as well as a bunch of seasonings), but then you can add whatever vegetable toppings you like, so I put in a ton of mushrooms and some asparagus and snow peas.
Otherwise I’ve just been catching up on my DVR and watching the snow outside – it’s not supposed to amount to much so hopefully it’ll just make for a pretty walk to work tomorrow and not be much of a nuisance!
Not much else to report from here – hope everyone is enjoying the end to the weekend! Tomorrow marks the start of my last full week at work until mid-March!!
